Sausage Biscuits
24 Pieces of southern style biscuit dough –
4 cups cooked sausage (country style)
2/3 cup sliced mushrooms
1 small can chopped green chilies
2 cups grated cheese (I use Mozzarella but you can use Swiss or cheddar)
6 eggs
Press biscuit dough into standard muffin pan that has been coated with Pam Spray or Crisco
– coat well as they will stick
Mix sausage, mushrooms, chilies, cheese and eggs together
Put large spoon full of mixture into the middle of each biscuit. I keep adding it until I have used all the mixture to fill the 24 biscuits. You can stuff it in pretty tight.
Bake 400 degrees for 15-18 min until brown on top
You can cool and freeze until you want to use them. I take 6 to 8 out each night and put them in the refrigerator for the guys to use the next morning.
Microwave 20-30 sec before eating.
