3 packages of Cream cheese (8 oz), softened
¾ cup sugar
1 tsp. vanilla
2 cups mini semi-sweet chocolate chips
1 extra serving size packaged graham cracker crumb crust
2 Tbs. whipping cream
3 Eggs
Heat oven to 450. Beat cream cheese and sugar in large bowl with mixer until blended well. Add eggs and vanilla, beat well. Stir in 1 2/3 cups small chocolate chips, pour into crust. Bake 10 minutes. Without opening oven door, reduce temperature to 250, continue baking for 30 minutes or just until set. Remove from oven to wire rack. Cool completely. When cool melt remaining chocolate and cover cheesecake completely. Refrigerate until thoroughly chilled. Top with whipping cream as desired.
