5 oz. mushrooms, sliced
1 3/4 stick butter
pepper and salt, to taste
1 1/2 cups white wine (cheap!)
2 Tablespoons flour
1 1/2 Cups milk
1/2 teaspoon nutmeg
2 Cups shredded Parmesan cheese, divided
1 Cup mozzarella cheese
1/2 pound of multi-colored spiral noodles
Make sauce by melting 1 stick of butter, then add the flour, salt, pepper, and nutmeg. Slowly add the wine and milk, stirring constantly. Sauté shrimp and mushrooms in the remaining butter. Add the shrimp and mushrooms to the sauce along with 1 cup of the Parmesan cheese. Cook the noodles according to the directions on the package.
In a 9x13 baking dish, layer 1/3 of the pasta, 1/3 of the sauce, 1/3 cup Parmesan cheese, and 1/3 cup of the mozzarella cheese. Repeat layers, ending with the mozzarella cheese on top.
Bake at 400 degrees for 20 minutes.
