Seafood Fettuccini

 

Sautéed ingredients:
Butter – enough to coat pan bottom
1 cup Sliced mushrooms
1 bunch Diced green onions
Tablespoon of minced garlic
 Small handful of fresh basil and parsley
 
Add to make sauce:
1 glass of white wine
1 Pt of sour cream
Couple of shakes of red pepper flakes
Salt and pepper to taste
 
After boiling, add approximately:
1lb halibut in bite sized pieces
½ lb raw shrimp
½ lb scallops

 

Using enough butter to coat the bottom of the pan, sauté mushrooms, onions, garlic, basil and parsley in a large frying pan.

 

Add wine, sour cream, red pepper flakes, salt, and pepper to the sautéed ingredients.   Bring to almost a boil.  Add small chunks of halibut and uncooked shrimp and scallops. 

 

Cook until fish is just done. Don’t overcook the fish because it will become tough.  Thicken sauce with cornstarch thinned with wine. Add enough to thicken sauce.  Serve over fettuccine noodles.
