1 onion, chopped
1 Cup green onions, chopped
1 green pepper, chopped
2 ribs celery, chopped
3 cloves garlic, minced
3 large tomatoes, chopped
8 oz. tomato sauce
1/4 Cup parsley, chopped
2 bay leaves
1 lb. hot sausage, cut into bite-size pieces (I use Reindeer sausage, but any kind of spicy sausage will work).
1 Tablespoon thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon white pepper
Place all of the above ingredients in a pot and simmer (the longer the better). Just before serving, add seafood and cook just until fish is done. Do Not over cook.
Add:
Halibut, cut into bite-size pieces
Shrimp
Scallops
Just before serving, sprinkle the chopped green onions on the top. Serve over rice.
