- 1” thick halibut fillet, skinned and cut into serving-size pieces (about 1/4 lb. each)
- 1/4 cup flour
- 1/2 teaspoon paprika
- 2 tablespoons peanut oil
- 1 tablespoon butter
- Pinch of kosher salt
- 1/2 cup unsalted pecans, finely chopped
- 4 tablespoons mayonnaise
- 4 tablespoons sour cream
- 1/2 teaspoon wasabi
Heat a sauté pan to medium high; set oven at 350.
Mix the flour and paprika together, and drag the halibut pieces through the mixture, just lightly coating the top and bottom.
In the heated sauté pan, put the peanut oil and butter. When butter is melted, put in the halibut pieces to sear. When the edges are brown, about 30 seconds, flip to other side. After about another 30 seconds, sprinkle on a pinch of kosher salt, and remove them from the skillet to a baking dish.
Place baking dish in oven, uncovered, for 15 minutes.
With the fish in the oven, mix together the mayonnaise, sour cream and wasabi.
To serve, put 1 tablespoon of pecans on a plate, then some of the sauce, halibut, and top with a little more sauce and any remaining pecans.
